William Fèvre Les Preuses is an exceptional Grand Cru combining and balancing the influence of two very different sites for a total of 2.55ha (22% of the appellation) - both on a limestone bed but with variations in topsoil and slope incline. The first one rests at the northern part of the appellation, where gentle slopes and dense, compact, clay-rich soil produce rounder and softer wines. The second one lies on the steeper slope further south, bringing freshness and minerality to the wine. William Fèvre blends both to produce a wine combining roundness, elegance, and intense minerality.
The grapes are manually harvested, and very minimal intervention is used in the winemaking process to assure natural fermentation. 50% of the wine is vinified in neutral French oak barrels for 5-6 months before finishing maturation in small steel vats.
