The Estate Spätlese is sourced primarily from parcels neighboring the top hillside sites, but also includes a pre-selection of fruit from Kiedrich Klosterberg and Gräfenberg. With an average age of 25-30 year old vines, our intense, special selection by hand focuses on grapes that give the wine an extra dimension of fruit and mineral intensity. This wine superbly displays Spätlese’s riper, richer style from later-picked fruit.
Harvested at 92˚ Oechsle (22 Brix), the wine is fermented only in stainless steel. To achieve the ripeness and residual sweetness in the wine, fermentation is slowly stopped by chilling the tanks. This Spätlese has a luscious, juicy character, bright, with white floral and peach notes and a touch of salinity. It is delicious now, but will get so much better with age! Only 650 cases of this wine were produced in 2019.

Fabulous, with lingering and mouth-salivating salinity. There is 9% alcohol with about 45 grams of residual sugar."
