Qualified as an Alta Langa DOCG wine, this cuvée is made of 100% Chardonnay grapes from Cassinasco and produced in a Metodo Classico (Champagne method). Grapes are hand-picked with rigorous quality selection in both the vineyards and the cellar. Each vineyard parcel is harvested and vinified separately, using the free-run juice from the crush. Primary and secondary fermentation uses only native, natural yeasts. After the primary fermentation, the wine stays in tank until May of the next year, then each lot is blended together and bottled for secondary fermentation. This wine stays on the lees for a minimum of 36 months and is "Pas Dosé" (no dosage added).
2013 Vintage Not Yet Reviewed. 2012 Vintage – 94+ Points, Monica Larner, Robert Parker Wine Advocate – “The 2012 Metodo Classico Blanc de Blancs Pas Dosé is a full-bodied expression of Chardonnay that never holds back in terms of fullness, volume and richness. The grapes have been worked carefully in order to harness the maximum potential of their aromatic and textural offering. The acidity is spot-on as well. The quality of the sparkler's effervescence is fine, silky and extremely elegant. This is a beautifully complex and intriguing wine with ever-fluid aromas of peach cobbler, baked bread and candied orange peel that shift and change with each magical swirl of the glass. Some 15,000 bottles were produced.”
