Cannubi is one of the best known and most prized crus in Barolo, now an almost completely organic district thanks to our efforts! 24 of the 26 producers that source from this vineyard have gone completely organic in their practices here. Further, we have installed digital instruments in the vineyard, which help predict weather patterns and also alert us of any potential fungus infections (from mathematical calculations based on heat and humidity). In Cannubi, the soils are calcareous and sandy, giving the wines here their elegance and freshness. The vineyards are quite steep – in my father’s time, they would carry cases by hand rather than risk the cows stumbling and falling down the slope… they were far too precious! Vinification takes place in steel tanks under temperature control with frequent pumping over and punching down, followed by aging in larger 2000L casks for 24 months and one year further in the bottle prior to release. A bright garnet red color, it has persistent aromas with floral and fruity notes and lively acidity.
