The Clémentin Rouge comes from 4 different sites within our region – Pessac, Gradignan, Martillac and Léognan. These sites are heavy in clay and gravel, creating strong root structures leading to concentrated clusters. These in turn impart a unique character that enhances the complexity and richness of the final wine.
Once harvested by hand and sorted in the vineyard, the berries for Clémentin rouge are gently detached from the stems and sorted with great detail in the cellar. This meticulous focus allows only the highest-quality berries to go into the vinification process. The grapes are poured into 25-90hl vats via gravity-flow for fermentation. After a 30-day maceration period, the wine is aged in French oak barrels for 18 months.
