The name Mimuèt is from a Ladin expression meaning “to my taste”. Convinced as we are that Alto Adige offers the best conditions for Pinot Noir, we devote special attention to this grape variety with the objective of producing wines with precision, lightness and a delicate structure. To do that, we experiment with cooler sites and focus on optimum timing for the grape harvest so that the grapes are still crisp and lively. That ensures our Pinot Noir has a requisite freshness and liveliness.
The grapes that go into this Pinot Noir are from gravelly soils with glacial deposits and high concentration of limestone. The fermentation is created with indigenous yeasts for several days before further aging in a mixture of stainless steel tanks, large oak casks and concrete for 12 months before bottling. This lower alcohol, fresh style of Pinot Noir is meant to be consumed in its youth to enjoy the brightness in flavor profile.
Garnet red in color with a ruby shimmer. The aromas are subtly pronounced with fruity and spicy notes with a delicate hints of wood. The flavors of elegant, medium in body and very light on their feet. The texture is wonderfully silky, refined with dry, fresh flavors and soft tannins. This wine is a great match to white meats, poultry, duck, venison and mild cheeses.
