Red wine was traditionally referred to as Shavi or “Black” wine in ancient Georgia, where the world's earliest evidence of winemaking has been discovered in 8000-year-old pottery jars. Saperavi, indigenous to Georgia with a meaning of “something to color with or to dye”, is one of the few teinturier grape varieties in the world that has both skins and flesh dark. Shavi is deep in fruit character, yet brisk with acidity, and has aromas of dark berries, licorice, tobacco, chocolate, and spices.
Recommended temperature for serving is 61–65°F / 16-18°C.
Best served with grilled or cold meat, vegetables, salads and hard/aged cheeses.
